Fettucini with Chipotle Cream Sauce and Bacon Wrapped Shrimp

There’s a Mexican restaurant in our neighborhood called Fiesta Mexicana that Katrina and I like to go to whenever we are craving good food and cheap margaritas. No seriously… the half-pitchers of margaritas and sangria average $15, and hold enough drink for six to eight full glasses, enough to make two adults feel pretty good. To top it all off, they give you free after dinner shots with the check. Anyways, recently they added a supplemental menu of specials to the regular menu. One of these is a creamy chipotle pasta topped with bacon wrapped shrimp, with some tomatoes and a rainbow of bell peppers mixed in. Katrina hates bell peppers, so without ever seeing or trying the dish we decided to make our own version at home. Homemade Pasta with Red Wine Sauce

Katrina follows tons of blogs on Google Reader (tons!), and came across a quick and easy pasta recipe from 30 Bucks a Week. We have never made pasta before, and don’t have any special pasta making equipment, so we thought this would be a fun dish to make. Tina and Phil put together a shallot, mushroom and red wine sauce, which inspired Katrina to create a mouthwatering sauce of beef, shiitake mushrooms, onions, and aged pinot noir. Boxed pasta will never taste the same again!
Turkey Lasagna

Nothing screams Italian like a homemade lasagna. It combines two of my favorite ingredients, cheese and meat, into a satisfying slab of deliciousness. I’ve attempted to create a “healthier” version utilizing turkey in place of beef or pork sausage, but to be frank, a meal with with this much cheese and meat will never be healthy.
