Brown Sugar Meatloaf and Fingerling Potatoes with Shallots and Garlic

I come from a very meat-and-potatoes family. My mom still has Fried Chicken Mondays and makes mashed potatoes just about every night with dinner. She also buys a side of beef (that’s half a cow!) every year for just the four people still living in the house. When I was a vegetarian in high school, I ate a salad for every meal because my mom didn’t know what else to make without meat in it. Moral of the story: We eat a lot of meat. And we eat a lot of potatoes. With Mothers’ Day coming up, what better way to celebrate my mom and the childhood she gave me than to make my wonderful boyfriend a Brown Sugar Meatloaf and Fingerling Potatoes with Shallots and Garlic?
Mutter Paneer

We love Indian food. One of Katrina’s favorite meals when we are getting delivery or going out to an Indian restaurant like Marigold is Mutter Paneer. She likes this dish because it is full of Indian flavor, but has a mild spiciness that is balanced out with a creamy tomato base. She made this at home after stocking up on some essential spices, and the resulting dish was far better than any Mutter Paneer we’ve ordered at restaurants. Try it out!
Chocolate Ginger Cupcakes

The first thing I had ever baked with Katrina were Raspberry Coconut Cupcakes topped with cream cheese frosting, toasted coconut, and raspberries. It was one of the first weekends we had spent together in Chicago and was a memorable experience for me. Katrina is typically the baking queen in this household, but this weekend I pulled out her favorite cupcake book and made one that she has never had before. My baking performance was respectable, and the Chocolate Ginger Cupcakes with Dark Chocolate Mousse were lip smacking delicious.
