Fettucini with Chipotle Cream Sauce and Bacon Wrapped Shrimp

There’s a Mexican restaurant in our neighborhood called Fiesta Mexicana that Katrina and I like to go to whenever we are craving good food and cheap margaritas. No seriously… the half-pitchers of margaritas and sangria average $15, and hold enough drink for six to eight full glasses, enough to make two adults feel pretty good. To top it all off, they give you free after dinner shots with the check. Anyways, recently they added a supplemental menu of specials to the regular menu. One of these is a creamy chipotle pasta topped with bacon wrapped shrimp, with some tomatoes and a rainbow of bell peppers mixed in. Katrina hates bell peppers, so without ever seeing or trying the dish we decided to make our own version at home. Eggs Benedict

The other morning Katrina decided that she was going to make Eggs Benedict for breakfast. We had all of the ingredients except for the English muffins. Instead of walking the two blocks to pick up a package of English muffins, we decided to make our own. This turned our breakfast endeavor into a nearly two hour ordeal, but the final result was a very delicious Eggs Benedict, and enough extra homemade English muffins to serve as our breakfast for the rest of the week.
Frittata w/ Bacon and Swiss

Whenever I have a lot of eggs that need to be used, I make a frittata. A frittata can be served at any time of day with the same satisfying results. They are incredibly simple to make, and cleanup is a breeze because you only need one pan. Any leftovers hold up very well in the fridge and can be reheated to taste as if they were freshly made.
