Homemade Pita with Hummus Dip

A couple of weeks ago I signed up for the Daring Cooks and Daring Bakers challenges on thedaringkitchen.com.  The first challenge I was able to complete was the Cooks challenge, and I must say, the Bakers challenge going up later this month is quite delicious.  The challenge for February 2010 was Mezze, which is basically a Middle Eastern assortment of appetizers or small dishes that comprise a meal.  I went with the bare minimum, pita and hummus, or else we would have had entirely too much food for two people.  Read on to learn more about the challenge.

Eggs Benedict

The other morning Katrina decided that she was going to make Eggs Benedict for breakfast.  We had all of the ingredients except for the English muffins.  Instead of walking the two blocks to pick up a package of English muffins, we decided to make our own.  This turned our breakfast endeavor into a nearly two hour ordeal, but the final result was a very delicious Eggs Benedict, and enough extra homemade English muffins to serve as our breakfast for the rest of the week.

Sometimes a doughnut in the morning is the greatest breakfast ever.  I love when somebody brings doughnuts into work.  There are plenty of great places to buy doughnuts, but now I’m convinced that there is nothing that can match one of these homemade Doughnuts with Chocolate Glaze.

Two Cheese Macaroni

The other day Chicago was hit with a big snowstorm.  When Katrina and I got off of work, the sidewalks near our home were covered in about a foot of snow and we had no desire to walk to the grocery store.  We wanted a nice, hot meal for dinner… so what could possibly be better than a creamy bowl of macaroni and cheese?

Pumpkin Cheesecake

I had intended on making a pumpkin cheesecake for Thanksgiving.  Unfortunately, due to the pumpkin shortage, I was unable to find a can of pumpkin puree to use.  Shortly after Thanksgiving, the shelves were overflowing with pumpkin puree and I snagged a can to use for this homemade Pumpkin Cheesecake.

Old-Fashioned Eggnog

I am always craving a glass of cold eggnog around the holidays.  The store bought stuff is delicious, but I wanted to try making my own for once.  I looked through numerous recipes to get an idea of the proportions to use, and came up with this easy recipe that doesn’t require boiling a custard and can be drank right away!

Southwest Biscuits and Gravy

One of our favorite breakfast places in the neighborhood is called Tiztal Cafe.  They have a small selection of tasty Mexican breakfasts, one of them being a delicious spin on biscuits and gravy.  I don’t know how they make it, but it is the tastiest biscuits and gravy we’ve ever had.  It served as the inspiration for making a biscuits and gravy dish with some Southwest flair.
